What is OIT?
OIT stands for oral immunotherapy which is the oral desensitization of foods. It works with IgE mediated but not cell-mediated food allergies, celiac disease or food intolerances.
Oral desensitization for foods is basically retraining the body's immune system to tolerate proteins which are currently sensitized. The process begins by introducing minute amounts of the food and incrementally increasing amounts over an extended period of time. This gradually increases IgG4 blocking antibodies and decreases IgE antibodies. This shifts the balance in the body from hypersensitivity to tolerance.
Our son will begin with about one micro-gram of milk in 2 ml of water and will increase from there until he graduates the program and can freely eat of milk and milk products as long as he continues his maintenance dose of milk everyday.

How long has OIT been around?
Dr. Richard Wasserman began treatment in 2005 in Dallas, TX. Many allergists, including Dr. Jones have gone to him to receive training on his protocols and research. Dr. Jones' first graduates to his program were in 2013 and has since graduated over 200 from the program.
